Cinco de Mayo is right around the corner so add these to your meal plan for the week and you have one less meal to worry about! These are incredibly easy and make great leftovers if you need to have a lunch ready for the next day. I love the flavor the Lime Vitality Oil adds to the meat and all these flavors are screaming summertime and Cinco de Mayo! Marinate the chicken breasts the night before and you have such a quick and easy dinner so you aren't missing out on the longer daylight and beautiful weather. Happy eating!
Tequila Lime Chicken Burritos
Recipe by Lauren Watson (#2221442)
Marinade: (2 hours to overnight)
1 lb boneless, skinless chicken breasts
⅓ c tequila
¼ c olive oil
¼ c lime juice
½ tsp each of salt and pepper
4 drops Young Living Lime Vitality Oil
4 burrito sized tortilla shells
1 c grilled sweet corn
1 c black beans
2 tomatoes, diced
Shredded hearts of romaine lettuce
Guacamole, sour cream, salsa, cilantro, etc for additional garnish
Combine all marinade ingredients in glass baking dish and marinate for at least 2 hours or overnight, turning chicken occasionally.
Preheat oven to 375 degrees.
After chicken has marinated, heat an oven safe skillet with 2 Tbsp olive oil over medium-high heat and brown both sides of chicken well. Place in oven and bake for 15-25 minutes, until chicken is cooked through. Remove from oven and cut chicken into 1 inch pieces.
Assemble burritos to your preference and serve with chips, salsa, guacamole, etc.
